New Recipe - Spaghetti with Sugo "Happy Birthday to Moni"

Some years ago my friend Moni – who celebrates her birthday today – offered me spaghetti with tomato sugo and I remember very well that I neither wanted to take it nor to taste it. I almost never ate meat, but then I only knew the typical Pasta Bolognese (spaghetti with tomato sugo and mince) and didn´t want to know how the sugo tasted without meat … stupid me! This was years ago, in the meantime we didn´t only have spaghetti with tomato sugo very often but I even became totally obsessed with it.

Ingredients (serves 2)

  • oil for the frying pan
  • 1/2 of an onion
  • 1 – 2 cloves of garlic (tip for everyone but Moni)
  • chili flakes (to taste)
  • 4 tomatoes
  • 200 ml tomato sugo/salsa (self-made or organic!)
  • salt, pepper
  • 1 tsp oregano
  • capers, fresh basil leaves, olives etc
  • 
    
  • about 200 g spaghetti*
  • 
    
  • * As the diet requires starch free noodles it is the best to take soba spaghetti (Japanese noodles), mine are made of buckwheat and sweet potatoes, but you can also take 100 % buckwheat soba noodles.

Put oil, diced onion and minced garlic into a frying pan, add salt and pepper. Sauté over medium heat for 3 – 5 minutes.

Stir in the diced tomatoes and the sugo, bring to a boil, reduce the heat and simmer – uncovered – for 30 minutes.

Add oregano, salt, pepper and chili flakes and – optional – basil leaves, capers, olives or olive pesto.

Bring water to a boil, salt and cook the buckwheat (soba) noodles for about 4 minutes.

Sieve the spaghetti, serve with the Tomato Sugo “Happy Birthday to Moni” and garnish. Then create from noodles and sugo any wild vegan beast you have in mind.
