New Recipe - Coconut-Chocolate-Pralinés

Continuing with the recipes for healthy sweets as my husband needs loads of them. Yesterday I made these super delicious coconut triangles, and he suddenly ranked them as his new Number One!!! So, they must really be very good as coconut is something I have been loving since always and he is usually addicted to everything that contains hazelnut and chocolate – be it cream, spread or pralinés.

To get the pralinés finished within one day you can make the filling in the early morning or the evening before – it is very easy and quick – and to let rest it in the fridge for some hours. The chocolate covering-thing can be done in the early evening. After 30 – 40 minutes again in the fridge they are ready to enjoy! They are even better the next day if you are patient enough and do not eat all at once.

  • Ingredients (yield 8 pieces)

  • 1 cup coconut flakes
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil
  • vanilla powder/extract
  • punch of sea salt
  • 3 – 5 tbsp water
  • chocolate to melt and cover (I took about 50 g, feel free to take more or less)

Put coconut flakes, maple syrup, at low temperature melted coconut oil, vanilla powder and salt in a bowl. Stir, treat with the hand blender, stir and blend again. Without blender it will be too lose. You can also use a food processor but for my opinion this is a very messy thing.

Line a plate with parchment paper. Take the coconut filling out of the bowl and make a roll, as firm as possible. Cut slices, about 1- 2 cm thick and form triangles or cookies. Put them back into the fridge.

Boil water in a small pan. Set aside. Put chocolate in pieces into it and let melt for about 3 minutes. Stir. If there are still chocolate chunks in, wait another 2 minutes. Stir until everything is well combined and let sit for a while. The cooler the chocolate cream is the easier is it to cover the pieces. Extra tip: if there is some cream left spoon the rest onto the pieces to get it thickly covered.
