It is Ice Cream and Berry Time

Some of you may remember that I had posted an article about the vegan tea time at the Paris Shangri-La on my blog. It was two months ago – about sandwiches, spicy spreads, creams and delicious layers. This time it is about the sweet things of life, as chef pâtissier Michael Bartocetti is a magician what concerns creating the most amazing desserts without using milk and eggs.

You can enjoy the vegan tea time in one of the many rooms of the Shangri La Hotel or on the terrace. In the moment there are many cakes, tartes and creams with berries as it is the berry season. I have been addicted to berries since I was a child and was always steeling strawberries and raspberries in my grandmother´s garden.

As it is summer and very warm and as my husband and I love eating ice cream I thought I´ll post a very easy vanilla ice cream recipe (real ice cream!) you can produce without the help of an ice cream maker. The only thing you need is a hand blender and some hours time to wait.

  • Ingredients (serve 2)

  • 2 very ripe bananas
  • 1 tbsp almond butter
  • 2 – 4 tbsp almond milk
  • vanilla powder

1. Slice and freeze bananas for at least 4 hours, the longer they are in the deep freezer the more ice creamier they will be.

2. Put the frozen banana slices into a bowl, add almond butter, almond milk and vanilla powder and mix lightly with a hand blender (don´t use the power button, it will make your ice cream too liquid). Set the mixer aside and stir with a spoon to find out if there are banana chunks in. If yes, blend once again. Voilà, your self prepared ice cream is ready.

3. Serve in wine or champagne glasses and decorate with berries and peppermint leaves.
