New Recipe - Antipasto in Bianco e Verde (Primer in White and Green)

I love everything green and white, and a bit of rosy too. This seems to me a kind of summer elegance – either in the garden, either on paintings, walls, clothes or on the plate. I prepare very often green and white dishes and always add a little bit of rosy or red. What the today´s salad concerns, it is chili flakes, but it also works with smoked paprika or finely cut red bell pepper cubes, (dried) tomatoes or French breakfast radish. Another good side effect of the dish: courgettes/zucchini and radishes have quite a few health benefits.

Raw courgettes/zucchini help to cure asthma, rheumatoid arthritis, they maintain optimal health, prevent diseases, help alleviate cancer conditions by washing away cancer-causing toxins, protect the cardiovascular system and help to lose weight in a healthy way. Radish is good for liver, stomach and skin, it facilitates digestion, lowers blood pressure, treats fever, acts as powerful detoxifier, has anti-cancer and anti-inflammatory properties and boosts immunity. It is very filling and helps in weight loss. And: courgettes/zucchini and radish taste delicious.

  • Ingredients (serve 2)

  • 1/2 of a courgette/zucchino
  • 1/2 of a white radish
  • salt, pepper, chili flakes
  • 1 tbsp freshly squeezed lemon juice (optional)
  • oil, vinegar
  • fresh herbs (I took marjoram*)

Wash courgettes/zucchini and radish, peel the latter. Slice finely – longwise – with the help of a mandolin. Put the slices on a plate, salt. Let sit for at least 30 minutes, if you want to bend or roll them as I did. They are much better pliable then.

Roll or bend the slices and decorate on a plate. Add salt, pepper, chili flakes and fresh herbs. Prepare a vinaigrette (or not – we sometimes prefer this without) or add freshly squeezed lemon juice. If you are very hungry serve with dehydrated crackers and enjoy!

*I love walking in the meadow every afternoon, looking at all the flowers, herbs and grasses which are flourishing now. We have many wild growing herbs, marjoram and thyme are only two that can be harvested until late autumn.
