New Recipe – Savoury Breakfast "Oriental"

My husband and I are very often on the move. As self-employed persons we spend much time in our cars. That means we have either to control our hunger (if we only trusted our cuisine) or take a meal in a vegetarian restaurant. If you happen to live in or near Graz you will be astonished how many there are. This is a very good one, it has got a stylish “sibling” some time ago, we often take a late breakfast there (as our first breakfast happens in the very early morning).

The Breakfast Oriental we took there the other day consists of two different sorts of Hummus (classic and green Hummus – fresh herbs are added – in summer, classic and red Hummus – beetroot is added – in winter), plum chutney, fried vegetables, rocket and pita bread. For those who have become hungry: the recipe for hummus which became a classic dish in the veggie cuisine.

  • Recipe (serves 2)

  • 250 g cooked chickpeas or one jar chickpeas (must be organic!)
  • 1-2 tbsp freshly squeezed lemon juice
  • 1-2 tbsp Tahini (paste of toasted sesame seeds, including oil and salt)
  • 2-3 tbsp water
  • 1 garlic clove, minced, or garlic powder
  • 2 tbsp best native oil (olive, linseed)
  • ½ tsp ground cumin
  • salt, ground paprika

In a food processor mix cooked or jarred chickpeas, tahini, lemon juice, oil, garlic, cumin, salt and water. Pulse, scrape the sides, pulse, scrape, pulse, scrape, until the mixture becomes smooth.

Serve with some extra oil and paprika. Enjoy with any kind of salad, chutneys, fried vegetables, crackers and/or nachos.
