New Recipe - Green Flourishing Summer Salad

What makes our healthy eating life in summer easy is my husband´s garden. We are both green-addicted, particularly to fresh herbs. The best side effect: nothing is more healthy for human beings than eating green plants because of the chlorophyll contained in it. And do you know why? The chlorophyll molecule is almost similar to the blood (=hemoglobin) molecule. As blood is needed for almost every process in the body, it is very helpful to support building the precious liquid.

  • Ingredients (serves 2)

  • 2-3 medium size tomatoes (we prefer the long egg-shaped)
  • 1/2 of a blue onion
  • 1/2 of a cucumber
  • 1/3 of a red bell pepper
  • 1 clove of fresh or pickled garlic (optional)
  • olives
  • olive oil, balsamic vinegar
  • salt, pepper, fresh green chilis
  • fresh or dried oregano
  • our greens: different types of parsley, basil, common yarrow

Peel onion and garlic and cut. Wash tomatoes, cucumber, red bell pepper, olives and chilis (who wants) and slice or cut into small cubes.

Put everything – from onion to chilis – into a bowl and pour olive oil on it. Salt, pepper. Add oregano and balsamic vinegar. Feel free to add roasted and salted pignoli/pine nuts, carrots, cheese or vegan cheese, pickled artichokes or …

Mix, arrange on plates and serve decorated with fresh herbs and bread (roasted in garlicky oil and salted). Enjoy the summer in it!
