New Recipe - Courgette/Zucchini Hummus and Other Delights

When I am in Vienna you will find me there. The Simply Raw Bakery*, a coffee shop in the City, welcomes you warmly and you feel there as if you were in your best friend´s sitting room. And there is something better: you get the most delicious things, espresso included, and the meals and sweets are not only tasty but also healthy. You can take everything without remorse, even during the Lenten season. All meals are plant based, the owner Gabriele Danek graduated in the United States at Matthew Kenney´s Academy. Last Tuesday I was there and took Courgette Hummus and a Raspberry Smoothie.

Gabriele Danek was so nice to name the ingredients of the Courgette/Zucchini Hummus I took. It was served with tomatoes, cucumber slices, rocket leaves, black sesame seeds and a delicious self made (dehydrated) courgette/zucchini bread.

  • Courgette/Zucchini Hummus (serves 2)

  • 2 small courgettes/zucchini
  • 1 cup sunflower seeds
  • 1 – 2 tbsp freshly squeezed lemon juice
  • about 2 tbsp olive oil
  • salt, pepper

Wash and cut courgettes/zucchini in pieces. Put into a food processor or into a high speed blender, add the other ingredients and mix.

You can also do it with a hand blender, but I would suggest to cut the courgettes/zucchini into small pieces and to soak the sunflower seeds in water before (about an hour). Mix, add the other ingredients and mix until everything is creamy. If you like it more chunky stop mixing earlier.

Serve with thinly sliced vegetables, seeds, nuts, self made crackers or dehydrated bread.

TIP

Buy chocolate truffles at the bar. They are in glass jars, different sorts, handmade, and taste like heaven! I took some for a friend I visited afterwards and we tasted … what shall I say? They are so chocolaty, melt in your mouth and are healthy! The worst thing: we enjoyed them and I forgot to take photos. So sorry, this is a good reason for you dear readers to go there if you are living in Vienna or nearby. If you need a Valentine for somebody you love I would buy many of them. Many = because you will not want to give them all away :-) .

* The coffee shop is in a beautiful part of the City, there are many baroque buildings nearby: A-1010 Vienna, Drahtgasse 2, next to Am Hof and Judenplatz.
