Not kidding – when you take this salad it is not only good for your health and for your body but it also helps to make your teeth whiter. The more you take it the whiter your teeth will become. It is said that organic carrots, celeriac and strawberries too have some cleaning power. With the help of apple cider vinegar you can even make away spots on your teeth. – For all those who want to do more for their teeth: prepare your own toothpaste as we do (s. recipe at the bottom). It is very easy, you know what is in and the whole family will love it.

  • Ingredients Salad (serves 1 – 2)

  • ¼ of a medium sized celeriac

  • ½ of an apple (Braeburn are very good)

Clean and cut celeriac, carrots and apple into small matchsticks, put into a bowl and toss with lemon juice.

Add Sauce Florentine* or vegan mayonnaise. You can also leave the vegan mayonnaise away and only marinate with a vinaigrette made of mustard, apple cider vinegar, oil, salt and pepper. Keep the salad for at least half an hour in the fridge.

Before serving decorate with parsley, chive, carrot curls and a celeriac rose (both only works with blanched vegetables).

*The Medici of this era had enormous problems with their teeth and jaws as a historic-medical study revealed.

**I had to rename Sauce Medici into Sauce Florentine as the word “Medici” (doctors) in the headline inspired a Canadian pharmacy to send me thousand spams/comments per week with offers for remedies.
