New Recipe - Avocado Cream Florentine, a Close Relative to Sauce Florentine

Like almost every (food) blogger I love cats and am obsessed with nut butters. How to pull this together? No idea. And what has this all to do with Avocado Cream Florentine? Our cat Topolino likes Sauce Florentine (he loves tasting it when I arrange a dish with salad to take a photo from) and either – Avocado Cream Florentine or Sauce Florentine – contain almond butter. This may be the secret of the special taste.

Ingredients (serves 1)

  • 2 halves dried tomatoes (soaked in water for an hour)
  • 1 ripe avocado
  • 1 – 2 Tbsp fresh lemon juice
  • 1 shallot
  • 1 Tbsp almond butter
  • salt, pepper
  • 1 tomato
  • ½ red bell pepper (optional)
  • chive or parsley

Peel avocado and mash with a fork.

Add diced onion, chopped dried tomato and fresh tomato (and bell pepper if you like it), lemon juice and almond butter. Season with salt and pepper. Mix well.

Garnish with chopped chive or parsley.

Serve with toasted bread (recipe here).

Taste it, I am sure you will love it. Lorenzo Medici would have said, “È deliziosa questa crema di avocado!” (“How delicious is this avocado cream!”)
