New Recipe – A Cup-Full-of-Green-Vegetables-Salad

My husband and I love smoothies and salads made of fresh fruits and vegetables. By the way, this is the healthiest way to take plants – not cooked as they loose then most of the vitamins, vegetable fatty acids and many other benefits. In summer there is such a rich harvest in the garden, in the moment it is strawberries, raspberries and courgettes/zucchini – the first two make a delicious smoothie, the latter a very tasty salad, especially when it is finely cut like this one. Believe me, in this special case it is enormously important to dice the fruits in tiny pieces and to let them sit for a while. More about below.

  • Ingredients (serves 2 as a primer)

  • ½ of a courgette/zucchino
  • ¼ of a cucumber (cored, the seeds contain lots of water and make a mixture very mushy)
  • avocado (you chose the quantity, I would use at least ½ of an avocado)
  • ½ of a blue onion
  • oil, vinegar
  • salt, pepper, chili flakes
  • radishes, tomatoes and herbs to decorate
  • dehydrated crackers (on the photo Italian Crackers* with flaxseeds, tomatoes and chili)

Dice courgette/zucchino, cucumber, avocado, onion in tiny pieces, they should be approximately the same size. Season with salt and pepper.

Put into a bowl. Marinate with oil and vinegar and press the mixture firmly. Put something on it, a small plate or something similar, to make it more dense. Let it sit for at least half an hour, the longer the better.

Sieve (to get rid of the water), spoon out and fill the mixture into small cups. Cover the cup with the plate on which you will serve the salad, turn and take the cup away. The result doesn´t only look very nice but keeps very well together. Decorate with radishes or tomatoes and herbs. Serve with dehydrated crackers.

*As I do not have a dehydrator I have to buy the crackers. You get best dehydrated products in the next organic supermarket or here on Internet.
